People who operate or, intend to operate, a food stall or vehicle need to ensure they know how to comply with food safety law. The Street Trader Hygiene Standards , (document for download below) prepared by Environmental Health Officers from all of the Lothian and Borders councils, gives advice on compliance and good practice.
